Backyard Classics Hybrid and Heirloom Vegetable Recipes - Salsa

Salsa by Cynthia

3 Quarts tomatoes, skinned and chopped

1-2 Cups jalapeño peppers, seeded and chopped*

2-4 Cups onion, chopped

2-4 Cups green peppers, chopped

1 Tbsp salt

1 Pint vinegar

Combine ingredients in a large pot and bring to a boil, stirring frequently.  Reduce heat and simmer for 45- 60 minutes.  Add three 6-oz. cans of tomato paste and simmer until it reaches your preferred thickness.  Add chopped cilantro to taste and garnish with chopped parsley.

One batch makes approximately 11 pints.

*Protect your hands with gloves while cleaning and chopping jalapeños.

Backyard Classics Hybrid and Heirloom Vegetable Recipes - Sauce

Classic Pizza Sauce

¼ Cup olive oil

2 Cups chopped onion

2 Cloves chopped garlic

5 Cups Roma tomatoes, diced

1 Tbsp fresh basil

1 tsp tarragon

2 Tbsp fresh oregano

2 tsp salt

1 Tbsp brown sugar

6 oz. tomato paste

Pepper to taste

Heat the olive oil in a sauce pan and add the chopped onion and garlic.  Cook until these ingredients are transparent.  Add the remaining ingredients and gently simmer for about 40 minutes.  For a smooth sauce blend cooled sauce in an electric blender.

One batch makes approximately 6 cups of sauce.

Fresh Spaghetti Sauce

1 to 1 1/2 pounds ripe tomatoes, about 3 large tomatoes

2 garlic cloves, peeled and minced or garlic chives chopped

3 tablespoons olive oil

1/4 cup fresh chopped basil

1/2 teaspoon salt or to taste

black pepper to taste

1 pound spaghetti

Freshly grated Parmesan cheese for serving

If desired, peel tomatoes; remove seeds, straining juice into a bowl.  Save the juice and discard seeds.  In a food processor, combine garlic, tomatoes with juice, 3 tablespoons olive oil, and basil.  Pulse quickly to chop items roughly.  pulse more for a smoother sauce, if desired.  Transfer to a bowl, add salt and pepper and let stand to marinate for about 20 minutes.

Cook pasta until just tender, drain and toss hot with the marinated tomato sauce.  If hotter spaghetti is desired, heat the sauce just until hot on stove top or in microwave.  Serve immediately with Parmesan cheese
